VINEYARD: The Santo Stefano hill in Perno, in the commune of Monforte d'Alba (CN)
GRAPE-HARVEST: Last ten days in September.
WINE-MAKING PROCESS: Traditional-style, floating cap fermentation at a controlled temperature of selected, thinned estate-grown grapes.
EXPECTED CELLAR LIFE: 4/5 years
ALCOHOL CONTENT: 12.5-13%
BOTTLING: In May following the vintage.
TASTING NOTES:
COLOUR: deep ruby-red;
NOSE: winey, strong, nicely fruity, with flowery touches;
TASTE: dry, nice body, bitterish, elegant, varietal.
TYPE OF BOTTLE: Albeisa
SERVING TEMPERATURE: approx. 16/18°
STORAGE: Lying down in cool, dark surroundings
PAIRINGS: This wine can be served throughout a meal, but is particularly recommended with white meats, soups and pasta.
